1 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
1 cup corn syrup
3 large eggs
1/2 cup granulated sugar
1/4 cup butter, melted
1 teaspoon vanilla extract
2 cups Topper Pecan Halves
Directions
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or line it with parchment paper for easy removal later.
In a large mixing bowl, cream together 1 cup softened unsalted butter, 1/2 cup granulated sugar, 1/4 cup packed brown sugar, and 1 teaspoon vanilla extract until light and fluffy, about 2-3 minutes.
Add 2 cups all-purpose flour and 1/2 teaspoon salt to the butter mixture. Mix until just combined, forming a soft dough. Press this dough evenly into the bottom of the prepared baking dish to create the crust.
Bake the crust in the preheated oven for 15-20 minutes, or until it is lightly golden brown. Keep an eye on it to avoid over-baking.
While the crust is baking, prepare the pecan filling. In a medium mixing bowl, whisk together 1 cup corn syrup, 3 large eggs, 1/2 cup granulated sugar, 1/4 cup melted butter, and 1 teaspoon vanilla extract until well blended, about 2 minutes.
Fold in 2 cups of Topper Pecan Halves into the mixture until they are evenly distributed.
Once the crust is done baking, remove it from the oven and pour the pecan filling over the hot crust, spreading it evenly with a spatula.
Return the baking dish to the oven and bake for an additional 25-30 minutes, or until the filling is set and slightly puffed. You'll know it's done when the edges are bubbling and the center has a slight jiggle.
Remove the bars from the oven and let them cool in the baking dish for at least 1 hour. Once cooled, lift them out using the parchment paper (if used) and cut into squares.
