Pecan-Crusted Chicken with Maple Glaze

Pecan Meal - 1.5
Pecan Pieces - One and One Half Pound

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a shallow dish, combine the Pecan Meal - 1.5, finely chopped Pecan Pieces - One and One Half Pound, salt, black pepper, and garlic powder. Mix well.
In another shallow dish, place the flour. In a third shallow dish, pour in the beaten egg.
Pat the chicken breasts dry with paper towels. Dredge each breast in flour, shaking off the excess, then dip in the beaten egg, and finally coat thoroughly in the pecan mixture, pressing gently to adhere the crumbs.
In a large oven-safe skillet, heat the olive oil over medium heat. Once hot, add the chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and crispy. You want a nice crust to form, so avoid moving them too much during this step.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
While the chicken is baking, in a small saucepan over low heat, warm the maple syrup until it's slightly thickened, about 3-5 minutes. Stir occasionally to avoid burning.
Once the chicken is done, remove it from the oven and drizzle the warm maple syrup over the top. Let it rest for 5 minutes before slicing.
